It is made from active enzymes produced by the "Koji fungus biogenic fermentation method," which has high enzyme activity. It is said to be fermented from 10 types of grains such as soy pulp and millet that are difficult to ferment, using selected koji enzymes from among 3000 types of koji enzymes.
